People seem to think that by calling me GINGER that I'm insulted. If, for example, I insult or upset they usually come back with, "But you're ginger"????

Depends on whether you mean a jokey insult (like how you insult friends...don't really mean it but just say it 'cos it's funny) or if you REALLY want to offend someone...it's not often that I actually *want* to insult anyone but when I do I find that explaining to them how completely and utterly inconsequential they are works a treat! after all there's not really any come back to telling someone that they're an insignificant speck who has absolutely no influence, point, or reason in your life...but then, i'm a c*nt
