Click reply on the person's post which you wish to quote.

 

The, when you come to reply, you will see that post down the bottom of your screen.

 

Copy & paste which bit you want to quote on your reply screen, but press 'quote' in the UBB options first.

Yeah, that quote comes naturally when you do the way i described above ! Its the only way to do it i think.
